Oven Dried Tomato!


Today I taught myself how to oven dry tomatoes. This is the result and all I can say is YUM! It is so easy...here's what I did:





  1. Quarter Campari tomatoes and lay skin down on parchment paper lined cooking sheet.
  2. Sprinkle 1 tbsp olive oil over tomatoes.
  3. Sprinkle 2 tbsp balsamic vinegar
  4. lay 6 sprigs fresh thyme on top
  5. Salt and fresh ground pepper to taste
  6. Bake at 275 for 1.5 hours
Allow to cool, and use in recipes! Can be stored covered in olive oil in air-tight container for up to 30 days. Enjoy!
